My Mom’s smooth and creamy pumpkin soup recipe is amazing! It is a great addition to any Halloween party and will be sure to blow your guests away. With its thick creamy texture and rich flavor, your friends will be lining up for this recipe in no time.

I am married to an American so I get to enjoy the best of both worlds. No matter where you are from you will love this recipe and use it time and time again.
What’s The Best Pumpkin For Soup?
According to my Mom, the best pumpkin for her pumpkin soup recipe is a Jap Pumpkin. In Japan it is known as a Kabocha and is grey/green color with yellow to light brown mottling.
It is her number one choice due to its thick consistency in soups. You can use other types of pumpkins in soups, Although many types are more watery than the Jap Pumpkin.
Another great option is the Kent Pumpkin, which is a variety of Jap Pumpkin.
Mom’s Pumpkin Soup Recipe
Ingredient Checklist:
☐ 1 Whole Jap Pumpkin (approx 3.5 kgs, 7.7 pounds)
☐ 1 Large Brown Onion
☐ 56g or 2oz of Butter
☐ 2 litres or 9 cups of Stock (chicken or veg)
☐ 2 Medium Sized Potatoes
☐ Salt and Pepper (add to taste)
☐ Thickened Cream
☐ Nutmeg
Method
Remove all skin from the pumpkin. Then cut it into small cubes (around the same size) and place them to one side.
Peel the potatoes and dice into cubes.
Cut and dice onions. Once you have done this saute them in a large pot with the butter. Do this until onions are soft, but not brown.
Then add the diced potatoes, pumpkin, and approx 1 teaspoon of salt and pepper (to start) to the onions.
Pour stock until it sits about 1 inch about the ingredients in the pot. Depending on the size of your pumpkin you might not use all of the stock.
Bring the entire contents to the boil and then reduce to a simmer for 20 minutes, or until potatoes and pumpkin are soft.
Then remove the pot from the stove and use a handheld blender and puree contents until smooth and creamy.
Saving the best till last, add a dollop of thickened cream and two pinches of nutmeg.
If you want to get a little fancy you can garnish the soup with some parsley and pumpkin seeds.
Pumpkin Soup is also great served with crusty bread and if your feeling a little naughty, some cooked bacon pieces.

I think the ultimate way to serve pumpkin soup on Halloween is in a pumpkin. You can mix it up too, by adding the lid, or some spooky bat-bread.
A great upside to this is no dishes. Everyone can throw away their pumpkin when the’re finished with it. The downside is carving out the pumpkins can be time consuming.
In Pumpkin Bowls
You can also serve the soup in a ceramic pumpkin bowl. This would still look great and saves you a lot of time. Many of them come with lids, which means you can serve the soup in advance and it will stay warm.
These are also a great idea for a Halloween dinner starter. There are a number of different pumpkin soup bowls you can choose from.
